This write up is completely 'fact-free' because these are my favourite food items along with their recipes.
This is my favourite amongst all. I love the tangy flavour it has. Chettinad masala is different from other masalas. Even though everyone has tasted it, my recipe is different from normal chettinad masala recipe.
For this You'll need,
Ingredients:-
Onions-3 Large
Tomato-3 Medium
Green Chilli-5 Thinly sliced
Cashew Nut Paste- 4 Tbsp
Fresh Cream-2 Tbsp
Coriander Leaves-2 Tbsp
Turmeric Powder- A Pinch
Kashmiri Chilli Powder-2 Tbsp
Salt- 1 Tbsp
Ginger-Garlic Paste-2 Tbsp
Coriander Powder-1 Tbsp
Soy Sauce-1 Tbsp
Dosa Batter-As per requirement
Instructions:-
Heat oil in a pan. Add chopped onions to it. Saute it until it turns into a golden-brown color.
After that add ginger-garlic paste to it. Add all the spices and salt.
Saute it until the raw smell goes away.
Add the tomatoes but before you saute close the pan with the lid and leave it for ten minutes.
After that saute it and add the cashew nut paste.
Add fresh cream but this optional and that is my secret ingredient. If you don't like that sweet taste in your masala there is no requirement to add fresh cream.
Close the lid and keep it on a low flame for five minutes.
Add coriander leaves.
Your Chettinad Masala is ready.
Now make dosa using dosa batter.
Spread the masala.
Serve it immediately with sambar and chutney of your choice.
I personally hate brinjal but if it is made in this way, I just love it.

For Marination,
Brinjal- very thinly sliced
Chilli Powder-2 Tbsp
Turmeric Powder-3 Tbsp
Salt- 1 Tbsp
For Masala,
Oil-2 Tbsp
Onion-2 Large
Garlic-Ginger Paste-2 Tbsp
Chilli Powder- 1 Tbsp
Turmeric Powder- 1 Tbsp
Tomato Sauce-1 Tbsp
Soy Sauce-1 Tbsp
Green Chilli-2 Thinly sliced
Instructions.
Initially marinate the brinjal with turmeric, salt and chilli powder. Keep it aside for at least thirty minutes. Heat oil in a pan and add the brinjal.
Fry the marinated brinjal in a pan.
In the same pan,add onion and saute it until it attains a golden-brown color.
Add ginger-garlic paste and spices. Saute it until the raw smell goes.
Combine tomato sauce and soy sauce and add it to the pan.
Add the fried brinjal and before sauteing, close the lid and keep it for ten minutes on low flame. Let it cook.
After that saute it.
Your Brinjal Roast is ready.
Serve it immediately with rice or roti.
