4 Bread slices
2 medium-sized sweet potatoes
1 1/2 cups bbq sauce
2 cups slaw salad mix
2 tablespoons mayo
1/2 teaspoon mustard powder

METHOD:
Step 1.
Preheat the oven to 400 degrees. Slice up the sweet potatoes about 1/6-1/8 inch thick. Lay the potatoes out on parchment paper and slather the bbq sauce on them. Sprinkle a little salt on top. Bake for 30 -35 minutes.
Step 2.
In a bowl, combine slaw, mayo, mustard powder, salt, and pepper.
Step 3.
Pile up the sweet potato slices on the bread and top them off with salad slaw. Lay the second piece of bread over it.

Toast the sandwich on skillet, or serve as is it right away.
