Happiness is like a cake
No festive season is complete without a cake. Especially if it is holiday rum cake we are talking about. Though holiday has its own charm, is it possible to make it more magical by probably adding some exceptional ingredient stated in Kelly’s grandmother’s cookbook? Just add magic.

Baking time :- 40-50 minutes
Ingredients:-
• Dry fruits as per choice-2 cup
• Orange juice- 1.5 cup
• Old monk original rum(magic ingredient)-0.6 cup/150 ml
• All purpose flour-2 cup
• Softened butter-1 cup
• Castor sugar- 1 cup
• Brown sugar-0.5 cup
• Eggs-4
• Baking powder-1 tsp
• Cinnamon powder-1 tsp
• Ginger powder -0.5 tsp
• Nutmeg powder-0.25 tsp
• Orange zest-1 tbsp
Instructions:-
o Set a saucepan in medium flame , add orange juice and bring it to a boil. Further add butter and let it melt.
o Set it off and add our magic ingredient- old monk and mix it well.
o Add the dry fruits in a bowl and mix it with old monk mixture prepared before. Saran wrap it and let it sit overnight.
o Next morning , preheat the oven to 180°C. Prepare a 9 inch cake pan with butter paper.
o Mix all purpose flour, cinnamon powder, nutmeg powder, ginger powder and orange zest together.
o In another bowl mix different sugars and butter together until it becomes light and fluffy.
o Further add one egg at a time and beat them well before moving to next.
o Mix flour mixture and butter-sugar mixture together. Further add rum mixture to it.
o Pour the batter into prepared pan. Bake it at 180°C for 45-50 minutes.
Let the cake rest for some time and then enjoy the magical cake with love .
