One of the most common street snacks in India is Pani Puri. Today it has dozen different names that change from region to region such as gol gape, puchka, phulki, pataashe, gup chup etc. You take one of these puris and put your thumb on one side to make an opening so that the stuffing can be easily filled in it then it is dunked into a spicy watery chutney and stuff your mouth with it where it explodes into a crispy and spicy treat, satisfying your soul.

ORIGIN

It is believed that when newlywed Draupadi returns home with her husbands she was given a task by her mother-in-law as she gave her enough dough to make one roti and asked her to serve all the five Pandava brothers. Draupadi was intelligent enough as she prepared small puris out of the dough and filled it with some leftover potatoes and served it. Seeing this, Kunti was impressed and blessed the dish with immortality. The origin of this dish is still a doubt but it has widely travelled across India and made the country fall for it.

The delicious taste, easy availability and low cost have made it one of the most desired snacks of every season. It is important to consume the puri immediately after it is dunked in water otherwise it becomes soggy and the content inside it comes out. The preparation of golgappe is not less than an art and also eating it smartly is also great skill in its own way. Many people hold a competition to eat golgappe, others share one plate of golgappa which makes them feel bonded and for some, it is a reason to have this snack with the favourite girl. It has now become a snack from streets to big restaurants and a part of fine dining in India.
