INGREDIENTS

For dough:-

  • 1/2 Kg Wheat Flour

  • 1/2 Kg Khova

  • 1 large cup Milk

  • 1/4th TSP Baking Soda

  • 1 Cup Almonds (or a handful) (ground coarsely)

  • 2 TSP Cardamom Powder

  • 2 TSP Sugar

  • 1/2 Cup Ghee

  • 1/2 Cup Oil

For Syrup:-

  • 7 Cups Sugar

  • 5 Cups Water

  • 1-2 Cardamoms

For Frying:-

  • 1 Litre Oil

METHOD

For Dough:-
1. Mix Baking soda in milk and add it to Khova gradually while blending it. This is to combine the soda with other ingredients and the liquid consistency of Khova will make it easier to knead the dough.

2. To the flour, add cardamom powder, ground almonds, sugar, the khova mixture, and knead it. The consistency must be a little sticky and not like a proper dough.

3. Add ghee and oil and knead a little more.
4. Let it rest for 15-20 minutes.
5. Apply ghee to your palms and make medium sized balls if the dough.

For Syrup:-
Add 6 Cups sugar, water and cardamom pods and heat until the sugar is completely dissolved. Strain the sugar solution in a broad vessel.

For Frying:-
Heat the oil. Add the dough balls and fry for 15 minutes in total. First on high flame for 5 minutes, then on medium low flame for 5 minutes and again on high flame for 5 minutes. The jamoon must turn to golden brown colour.

As they are fried well, add them to the sugar syrup and let them dip in for few minutes and then sprinkle sugar little by little on it so that it sticks on the jamoon. Add all the jamoon to the syrup and sprinkle sugar on it.

The jamoon is now ready to be relished.
