Rice is one such grain that is the main food item of almost half of the population of the world. There are several varieties of rice available all over the world as per the taste, size and even the aroma. According to Wikipedia, 20% of dietary energy supply is provided by rice. Hence, today Veg Bhookkad is here with a recipe with rice aka Kadai Pulao. This dish is named as Kadai Pulao because it is made using a Kadai that is Wok.

INGREDIENTS

  • 4 medium sized Tomatoes/Tamatar

  • 2 medium sized Onions/Kanda

  • 150 gm CauliFlower/Full Gobi

  • 1 Capsicum/Shimla Mirch

  • 3 Cups Rice/Chawal

  • 1 Cup Peas/Matar

  • 1 Tablespoon Tomato Ketchup/Sauce

  • 1½ Teaspoon Pav Bhaji Masala

  • 1-1½ Salt/Namak as per taste

  • ½ Teaspoon Turmeric/Haldi

  • 1 Teaspoon Red Chilli Powder/Lal Mirch

  • ½ Lemon/Nimbu

  • 2½ Tablespoon Oil/Tel

  • ¼ Teaspoon Cumin Seeds/Jeera

MAKING THE GRAVY

  • First step is to boil the rice.

  • Chop the tomatoes, onions, capsicum and cauliflower in the manner shown below.

  • Peas generally take more time to cook. So the trick here is to half boil the peas in prior.

  • Now take oil in a pan or Wok(Kadai) as shown in the picture below and heat the oil.

  • Once the oil enough, add the cumin seeds and let it cook.

  • Then add the chopped onions and cook them until they are golden brown.

  • As the onions get cooked, add the chopped cauliflower and capsicum.

  • Again cauliflower is time consuming in terms of cooking. So we will cover the Pan/Wok with a lid and let it cook on medium flame for about minutes. This way we will not require to add water, the vegetables will cook with the help of steam.

  • When the vegetables seems cooked, add the chopped tomatoes.

  • Post this add Ketchup and the spices-turmeric powder, chilli powder and pav bhaji masala. (Pav Bhaji Masala is easily available in the market. It is provided by several brands like Everest, MDH, etc.)

  • Now add Salt and mix all the ingredients very nicely. Now, you can enjoy the aroma of this mix.

  • It's time to add peas. Now turn the fame to high and let the gravy cook.

    MAKING THE PULAO

  • Add rice as soon as you see a seperate layer of oil and the gravy.

  • Mixing the rice with the gravy is again a trick. Since, the rice is already cooked, they will be soft. So you should not mix it casually like we do with other things. Very gently, use Tablespoon and lift a part of rice from below and put it above. You should continue doing this you get all the rice mixed with the gravy.

And your Kadai Pulao is ready. You can garnish the Pulao using roasted cashew nuts or you can also use the fresh coriander leaves and serve to eat. You can serve it with Curd/Dahi.

TIPS

  • Instead of mixing the rice, you can serve the gravy and rice separately. You can use Jeera Rice instead of plain rice for this.

  • This is a pulao, so the vegetables are not completely cooked. You will sense the taste of every single vegetable. But if you don't like the taste you can cook them for more time.

  • You can use any vegetables to make a Pulao like Carrot, Beans, Cabbage, etc. It all depends on your taste preference.
