Okra which is also known as Ladies Finger. It is valued for its edible green seed pods. Raw Okra is 90% water. 2% protein, 7% carbohydrates and negligible in fat. Raw Okra is rich in dietary fiber, Vitamin C and Vitamin K with moderate contents of Thiamin, folate and magnesium. Many people consume Okra Leaves in salads. The green Okra seeds are also consumed as a caffeine free substitute of Coffee. Okra Seeds are also used for Greenish Yellow Okra Oil.

Okra is also very good for health. It contains beneficial antioxidants like polyphenols. It can also lower the risk of heart disease. its thick gel like substance which is known as mucilage binds cholesterol during digestion which ultimately prevents the absorption of cholesterol in the body. It also contains Lectin which may inhibit the growth of human cancer cells. Okra may also lower blood sugar. Research in mice has indicated that eating Okra or its Extract may help decrease blood sugar levels. Okra is also a good source of folate which is an important nutrient for pregnant women.

Now, when we know that Okra is so beneficial, lets learn something tasty using Okra.

INGREDIENTS:

  • 250 gm Okra/Bhindi

  • 1 Tomato/Tamatar  (Large sized)

  • 2 chopped Onions/Kaanda (Small Sized)

  • 2 Tablespoon Oil/Tel

  • ½ Teaspoon Salt/Namak

  • ½ Teaspoon Red Chilli Powder/Laal Mirch Powder

  • 1 Teaspoon Coriander Powder/Dhania Powder

  • ¼ th Teaspoon Mango Powder/Amchur Powder

  • ¼ th Teaspoon Turmeric Powder/Haldi

  • ¼ th Teaspoon Garam Masala/Mixed Spices

  • 1 Teaspoon Ginger+Garlic+Green chilli Paste/Adrak+Lasoon+Hari Mirch paste

  • ¼ th Teaspoon Carom Seeds/Ajwain

  • 1 pinch Asafoetida/Hing

  • Some Fresh Coriander leaves to Garnish

Preparing Okra

  • The first thing we need to do here is to heat the oil in a pan.

  • Then you need to add the Chopped Okra (as shown in the picture). The trick is you have to fry the Okra. You have to keep simmering at high flame until you get soft green Okra. Generally, it takes 10 mins for the completion of this step but it depends on your gas and the Okra.

Preparing the Gravy

  • Take the excess oil from the pan used in the above step to another pan.

  • Add Carom seeds in it.

  • Next, you have to add onions and Ginger-Onion-Garlic Paste and saute. We will cook this till we see the change in colour of onions to Golden brown.

  • Post that you have to add the chopped tomatoes.

  • Because we are not adding water to it, we will cover the pan with a lid and let it cook through the steam at low flame. We have to cook this for about 5 minutes.

  • Once the vegetables are cooked, It's time to add the spices. So we will take Red Chilli Powder, Turmeric Powder, Coriander Powder, Mixed Spices, Mango Powder and Salt.

  • Add the Okra that you have fried earlier. Mix it nicely and again cover with the lid. Cook it for next 5 minutes at low flame.

  • Garnish with some fresh coriander leaves and your dish is ready to eat.
