Our spicy , hot curries make up a major part of The Traditional Indian Gastronomy. This article is a "dummie's guide to cooking Indian Curry". Being a techie, I was taught to develope an 'algorithm' before working on any project. Just thought wouldn't it be a good idea to chalk out an "Algorithm to make the Perfect Indian curry." So, here's the recipe for the people who like to see and do things the easy way.
Step 1: Heat a pan and pour oil of your choice to it
If Health conscious : Skip Step 1.
Step 2: If from down south /a Madrasi/a Mallu : Add a generous amount of mustard.
Else : Add Cumin seeds.
Step 3: Add freshly chopped onions, tomatoes and chillies(only if you are tolerant to the spice) and fry until brown.
If belonging to any culture that restricts eating onions : Skip Step 3.
Step 4 : Add turmeric as much as needed to get that shade of yellow that soothes your eyes and salt to satisfy your taste buds.
Step 5 : Add pulses/lentils/chopped vegetables/ meat/fish boiled to make it perfectly tender, to this mixture that defines the world-famous taste of the spicy, hot "Every Indian Curry Ever".
Step 6 : Cook until perfection.
Step 7 : Enjoy
