Paneer is a cottage cheese which is made by curdling milk. Paneer in India is a very common ingredient. However, earlier it was considered a rich man's dish and poor man's wish but today almost everyone eats Paneer. I believe there would hardly be any who doesn't like paneer. I mean I just love paneer so much that I can eat it in any form and with any flavour.

Paneer is used in many different types of dishes. It is used to make Indian Curries, Sweets, Biryani. Now, many dishes that are considered as fast food also use paneer in their dishes like Chilli Paneer, Pizza, Sandwiches, Wraps, Burgers, etc. So, if we observe Paneer blends with everything and it can blend with every kind of taste.

So Veg Bhookkad is here with its new recipe - Paneer Bhurji.

INGREDIENTS: 

  • Paneer made from 1 Litre Milk

  • 1 Capsicum

  • 2 chopped Tomatoes/Tamatar (Medium sized)

  • 3 chopped Onions/Kaanda (Medium Sized)

  • 2 Tablespoon Oil/Tel

  • ½ Teaspoon Turmeric/Haldi

  • ½ Teaspoon Red chilli powder/Laal Mirch (Medium Spicy)

  • 1 Teaspoon Coriander Powder

  • ½ Teaspoon Of Mixed Spices/Garam Masala

  • ⅓ Teaspoon Salt

  • 1 Teaspoon Ginger+Garlic+Green chilli Paste/Adrak+Lasoon+Hari Mirch paste

  • 2 Tablespoon Water

  • Some Fresh Coriander leaves to Garnish

Process

  • The first thing we need to do here is to heat the oil in a pan.

  • Once the oil is heated, we will add the Ginger-Garlic-Chilli paste and saute.

  • After this, we will add the chopped onions to it. We will cook this till we see the change in colour of onions to Golden brown.

  • Next step is to add the chopped tomatoes.

  • Because we are not adding water to it, we will cover the pan with a lid and let it cook through the steam at low flame. We have to cook this until we see a separate layer of oil and tomatoes like this.

  • Post that we will add Capsicum, mix it and again cover with a lid for it to cook at low flame for about 10 minutes.

  • Once the vegetables are cooked, It's time to add the spices.

    So we will take Red Chilli Powder, Turmeric Powder, Coriander Powder, Mixed Spices and Salt in a bowl of water and mix it very nicely.

  • Now, we will add this mix to our pan and mix all the ingredients well.

  • Next step what we do is we will keep stirring the the ingredients in the pan at high flame and we'll cook till we see a change in colour. However, we can also avoid stirring. We can simply cover with a lid again and cook it for some time.

  • Finally, we will add the Crushed Paneer since it is a Bhurji and mix it well.

  • Garnish with some fresh coriander leaves and our Paneer Bhurji is ready to eat

Serve it with some raw onion rings and and fried green chillies.

TIPS

  • Adding spices mixed with water gives a good flavour to the dish.

  • Also there are chances of the lumps of the spices in the dish which can be avoided by mixing them in water before adding to the dish.

  • Here, we have added 1½ Tablespoon of water in the bowl so that after adding the spices to dish, we can wash the bowl with the remaining ½ tablespoon and utilize the left out spices in the bowl.

  • Be patient while cooking the vegetables because if they are not cooked properly you will feel a taste of the raw vegetables in the dish.
