If you have unconditional love for food, you’ve got to try Marwari dishes. They are YUMAZING!!
Marwari dishes are rich , colourful and unique just like their culture. From a range of vegetarian dishes to delicious sweet dishes , they have it all. The making of Marwari dishes have been largely influenced by the climatic conditions of Marwaar (Present day, Rajasthan , India), the hunting expeditions of the great rulers, scarcity of water and availability of spices. The ingredients were chosen as per their ability to survive in such climate and their longitivity.So, there was a lot of pressure on the so called BAWARCHI (Chef), to cook such cuisines which will last for several days, will consume less water and will have a marvellous taste of spices.

The following dishes are a must, if you ever visit Marvaar.

1.DAL BAATI CHURMA
It is the classic dish of the state, Baati is hard unleavened bread cooked in the desert areas of Rajasthan. It has a long life and hardly requires water for preparation. It is always accompanied by Dal or lentil curry, on the other hand, Churma is grounded wheat mixture, crushed and cooked with ghee and jaggery or sugar.

1. KER-SANGRI

It is one of the famous dishes of Rajasthan, Ker is a wild berry, which is tangy and peppery and Sangri is like a long bean. These two have real survival kit in times of draught.

2. GATTE KI SABJI

This traditional dish has fried or steamed gram flour balls , cooked in curd gravy with lots of Indian spices which give it not only marvellous taste but a YUM!! look as well. It is paired with a couple of Bajre ki roti ( Millet flat bread).

3. KACHORI

Oh! I hope everyone has heard of the delicious Kachoris . Kachoris are found throughout India, but the two infamous varities of Kachoris from Rajasthan are: Pyaaz Kachori and Mawa Kachori. These are fried puff pastries with amazing tastes.

4. GHEVAR

Ghever is a dessert that is made of ghee, milk and flour mixed together and then doused in sugar syrup. Mainly garnished with Almonds, Pistachios, Saffron. There are several varieties of this dish : Plain Ghevar, Malai Ghevar, Meva Ghewar. Almost every occasion in Rajasthan is accompanied by Ghevar.

5. MIRCHI VADA

As the name says, it has chillies in it. It is one of the specialities of Jodhpur, Rajasthan.It has a filling of potatoes and chillies and are served with mint and tomato chutney.
