Well, take about 500 gms of chicken and marinate it with a bit of lemon, salt, turmeric powder and beaten yoghurt. Allow it to rest when you smoke mustard oil into a pan. In case of Bengali cuisine, the mustard oil is a must. After the smoking is done, drop a few green cardamoms, cinnamo stick,cumin and dry basil leaf and saute. This gives out a beautiful aroma.

After that, fry 2 medium onions, finely chopped, till they are light brown. Add a bit of sugar while frying as it caramelizes the onions real nice. Again, a Bengali food hack. After that, add about 2 tale spoons of ginger garlic paste and fry. When the raw smell has gone, add the masalas and fry.Add chilli powder, turmeric powder, salt and coriander powder. Well, Bengali cooking is essentially about estimating by feel, so I will leave the proportion of spices to you. Still, 1/4th of turmeric to 1 spoon of red chilli powder to 2 spoons of coriander powder is a rough estimate. Salt as per choice.Fry till the raw smell of spices is gone.

Then get your chicken marinade in. Fry the mixture well and cook for 15 minutes. Add a few leaves of coriander. And that's it. This goes well with both rice or chapati.
