After days and days of scavenging on the internet for the perfect fudgy brownie recipe for a cold winter day, I finally stumbled across this gem! If you think that you have tasted the fudgiest brownies before, well, you haven’t tried this one yet. I bring you to the recipe of the Chocolate Gods, for after this, all your chocolate cravings will be gone. Hopefully.

Ingredients

  • 1 cup white sugar

  • 1/2 cup salted butter

  • 3 large eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup + 2 tablespoons flour

  • 2 tablespoons cocoa powder

  • 1/4 teaspoon salt (to taste)

  • 228g semi-sweet chocolate

  • 1/2 – 1 teaspoon baking soda (optional)

Instructions

  • Preheat the oven to 350° F or 175° C. Line the bottom and sides of a 9x9 inch square pan with parchment paper.

  • If your sugar is granulated, make sure to grind it to powdered sugar using a mixer. For the chocolate, I usually buy a block of dark compound chocolate and use it for most of my recipes. It is a little hard to break into small pieces, but it works amazingly well with most recipes! The company I buy from is Morde.

  • Melt the chocolate and the butter in a medium saucepan using double boiler method. Or you can also melt it in the microwave with 20 second intervals. I would definitely suggest the double boiler method since I think it leads to more even melting. Melt till both the butter and chocolate are mixed to a nice syrup consistency.

  • Mix the sugar with the butter and chocolate mix in a medium-sized bowl. The mixture will look kind of clumpy, but don’t worry about that now.

  • Next, add in your eggs one-by-one. And whisk the mixture well with either a hand mixer or an automated one. You can also add the vanilla essence at this point.

  • In a separate bowl, mix all your dry ingredients i.e. flour, cocoa powder and salt. Make sure to sift the dry ingredients before mixing to avoid any clumps in the final batter!

  • Add the flour mix to the wet ingredients mixture and mix until well-blended.

  • Since the recipe does not use any baking soda, it makes the brownies extra fudgy. But if you want you can add 1/2 – 1 teaspoon of baking soda to the batter.

  • At this point your batter is almost ready. If you want to make it even more chocolatey that it already is, you can add a few chunks of chocolate into the batter. Although I must say, even without it the recipe has tons of chocolate to satisfy your cravings. Also, the batter should be of slightly thick consistency as this would make brownies fudgier.

  • Once the batter is ready, it is time to bake! Pour the batter into the baking pan and bake for around 35 minutes until the brownies begin to pull away from the edges.

  • When done, take them out and let them cool for a few minutes. You can even put it in the refrigerator for around 20 mins once the brownie is at room temperature, for letting it set longer.

One problem that I did encounter was during trying to cut the brownies into perfect squares because they so fudgy. Refrigerating them for a bit actually helps with that, so I would personally recommend it. Your fudgy brownies are now ready, and you can finally indulge yourself in this chocolatey gooeyness. Stay tuned for more of my personal favourite recipes to bake!
