The dried stigmas of Crocus Sativa(an autumn-flowering perennial plant) are, together called as Kesar(saffron). It takes 75,000 i.e, 2,25,000 stigmas to make up one pound(454 grams) of Kesar. Thus it is worlds most expensive spice. It probably descends from the eastern Mediterranean autumn-flowering Crocus cartwrightianus, which is also known as "wild saffron" and originated in Crete or mainland Greece.

Now saffron is cultivated in many countries around the world, India, Turkey, China, and Iran to name a few. Iran is the world's leading producer of Saffron, with more than 94 percent of the world yield. It exports the spice to 46 countries all over the world. Good saffron crop production demands a cold, dry climate with well-drained rich fertile soil and irrigation facilities.

Saffron has innumerable benefits which include preparing food, diaphoretic(to cause sweating), carminative(to prevent gas), it is an antioxidant and it has many therapeuticapplications too.

In India, it is produced in Jammu and Kashmir and Himachal Pradesh. The place in Kashmir where you can find saffron is to look for saffron cultivated lands and sapphire mines in the town of Kishtwar, which is also a district in the Indian state of Jammu and Kashmir.
