Milk is considered as a complete food. Since ages, we have been told to consume milk and its products because of the fact that they are nutritious. At present time, all the people in this world except vegans consume milk in one form or the other. Be it butter, yoghurt or cheese, milk is the godfather of them all. One of the simplest products made from milk is curd or yoghurt as it is called in most of the western countries. It is made from the lactic acid fermentation of milk by lactobacillus and bifidobacteria. The basic difference between curd and yoghurt is that curd is made by a mild acid like lemon and yoghurt is made with the help of certain bacteria stated above.

The question which arises now is that which one is better, milk or yoghurt? Both are rich sources of calcium but milk has higher calcium content. On the other hand, yoghurt is considered better when it comes to the following aspects-

Yoghurt/curd is easier to digest by the body especially in case of adults as it is already in its predigested form. The bacteria and the acid produced by them breaks the tertiary protein structure into easily digestible primary structure.

Yoghurt/curd is rich in vitamin C whereas the milk lacks it. This makes it wholesome for the body.

It is the best option for lactose intolerant patient who can’t consume milk as such. It is tastier and most people like its creaminess amalgamated with sourness. It also comes in different flavors in the market like pineapple, mango and strawberry.

The bacteria present in the yoghurt help to maintain the digestive system and gut health. Bacteria like lactobacillus and bifidobacterium help in the maintenance of the intestinal microflora.

The protein present in the yoghurt is more than that available in the same amount of milk. The protein is easily digestible, wholesome and has high biological value.

This comparative study shows that yoghurt/curd is better than milk in terms of digestibility and availability of nutrients. Adults, children as well as old people can eat it. You can even make various dishes like salad, dips, smoothie from it. It can be bought from the market or even made in homes by adding a leftover inoculum into boiled lukewarm milk. Add some fresh vegetables into it, add herbs and spices and you are good to go!
