Rainy season finally arrives full-fledged. And the aroma of earthy mud fills the heart and links us to our own mother earth.

In my last article, a very loved recipe was shared for you all to try and share your fun and enjoying moments while relishing the item made by you.

So in continuation of previous part let's discuss a few more tips and tricks for this muddy season:

  1. Always carry your umbrella with you or raincoat if you are driving.

  2. Carry a small plastic ziplock pouch to put in your mobile in case you get drenched in rain. If your mobile phone gets in the water, sipe it out with dry cloth when you get home and put it in rice grains as it will soak all extra water.

  3. You may not feel thirsty sitting in the office in AC because of the weather but you need to stay hydrated. Sip warm water in between.

  4. Wear open footwear most times and in case you need to wear closed shoes dry it out by keeping in open. If they smell bad, put tea bags inside shoes whole night. The smell will vanish in the morning.

  5. Have your home cooked food and avoid outside food whenever possible.

  6. Rainy season makes us feel lethargic as we cannot go outside most times, do exercise at home or do on spot jogging to feel energetic.

  7. See that pots and planters drains water and mosquitos don't penetrate near or inside your home.

These were some of the basic things to follow but lets again learn a new recipe for this winter but it's a bit different and snacky in nature but with a dash of healthy nutrients in it.

Recipe name: Toasted bread Cutlets

Total time required: 35 mins

Ingredients:

  • Brown Bread - as many pcs as you want to make.

  • Onions 1 cup finely chopped and green chilly- 2 finely chopped

  • 2 cup beetroot, beans, potato, peas, cabbage, carrots, corns mixed together

  • Spices: turmeric, chilly powder, coriander powder, chat masala, garam masala, chilly flakes and oregano mix

  • Mint and coriander leave chopped.

  • Salt as taste

  • Water - 1/2 cup

  • Refined Oil

Method:

  • Take a frying pan and put 2 tablespoons of oil in it.

  • When it heats up add the chopped onions and green chilly. Saute for 2 mins.

  • Add the chopped mixed vegetables and add salt, spices mentioned above as required except chilly flakes and oregano.

  • Cover the pan and cook for till vegetable becomes tender, maybe for 4 mins or so.

  • Now uncover the pan let the stir fry dry out a little. Add chopped coriander and mint leaves.

  • Take the minute in a bowl and let it cool for 5 minutes.

  • Till then take the crown bread pieces and cut its all four sides.

  • Take water in a plate and place bread slice on it by tossing on both sides. Slightly press it with hand and put 1 tablespoon of minute inside it in the middle. Cover the mixture with bread slice corners by patting it.

  • Same way prepares other bread cutlets as you require.

  • Heat a nonstick pan and add 1 tablespoon of oil in it. Put the few bread cutlets in it. Toss on the heat for 2 mins on medium heat, turn the other side and add a tablespoon of oil and further toss for 2mins.

  • Serve it hot on the plate after tossing both sides till slight golden colour.

  • Sprinkle chilly flakes and oregano on the cutlets.

  • Enjoy it with your choice of chutney or tomato ketchup while sipping your evening tea or coffee.

This recipe is full of vegetables and made with very less oil. It takes a bit of labour to prepare but better than eating outside fast foods.

Also, try this one out when you are bored and cannot go outside because it's raining.
